TSM Cooks: Roasted Chicken

Last Christmas holiday, I thought of something to prepare for the family that is not complicated to prepare since I am the only one who cooks for the family. So I thought, we will just buy roasted chicken from Chooks To Go, our favourite roasted chicken which has a branch near us. But to our dismay, it has a very long queue and I do not have the liberty of time to wait for it so, I just whipped something in our freezer instead. 

Chooks To Go chicken is very juicy and has that hint of sweetness that is why the whole troop loves it. It is really quite challenging to recreate something or even close to it's taste. So here's what I came up with, and to my surprise, it was close! 



Roasted Chicken

Ingredients:

Lemongrass
Olive Oil
Salt
Oyster Sauce
Brown Sugar
Soy Sauce
Pepper
Onion
Garlic
Rosemary


Procedure:

1. Prepare the dressing. Mince garlic and onion. Mix oyster sauce, Olive oil, brown sugar, salt pepper,   rosemary and garlic.
2. Make sure the whole chicken is clean and ready for dressing. I used cold chicken (freshly thawed) so that the meat of the chicken will retain the juice. 
3. Put salt and pepper inside the chicken's cavity. Stuff it with lemongrass. Tie both legs together with food grade twine for the contents to remain intact.
4. Rub the whole mixture outside of the chicken. Make sure you rub it in the entire chicken and do not miss any part. 
5. Preheat the oven to 200 degrees centigrade. Put the chicken on the pan, breast on pan and cover it will foil (this is to prevent from burning the garlic and herbs). Bake for 45 minutes. 
6. Decrease the temperature to 150 degrees on the 30minute mark and cook it for another 15 minutes. 
7. Remove the foil and continue baking it for another 5 minutes. 
8. Serve. 

Make sure to check the chicken every 30 minute mark because it may vary on the size of the chicken. I used medium sized chicken in this recipe.

  2. Wow ang sarap po mommy. Iba talaga kapag kompleto ka din ng kagamitan sa kusina lahat ng gusto mong lutuin maluluto mo. Tapos ang laking tipid din kaysa kumain ka ng ganyang sa mga resto.
